Spicy Egg Curry
Spicy Egg Curry is a delicious, spicy gravy made with boiled eggs which were sautéed with spicy onion and tomato masala. There are many variations in egg curry. Today I am sharing Andhra style egg curry with simple instructions along with photos. You can also replace eggs with prawns or even mushrooms. For vegetarians, they can use any vegetables like potato, cauliflower. This delicious, simple and easy to cook egg curry goes well with white rice or jeera rice and also with chapati.

Spicy Egg Curry
Spicy Egg Curry is a delicious curry made with boiled eggs added with Indian spices.
Ingredients
- 4 Boiled Eggs
- 1 cup Chopped Onions
- 1 cup Chopped Tomatoes
- 1 Chopped Green chilli
- 1/2 tbsp Turmeric
- 1 tbsp Chilli Powder
- 1/2 tbsp Coriander Powder
- 1/2 tbsp Garam Masala
- 1 tbsp Coriander Leaves
- 1 tbsp Salt
- 1 tbsp Oil
Instructions
- Heat oil in a vessel. Add mustard, cumin when they splutters also add cardamom.
- When the cardamom is fried, we get a nice aroma then we can add chopped onions and green chillies. Saute them.
- Also add ginger garlic paste and fry till raw smell goes off.
- Add chopped tomatoes, turmeric, chilli powder, coriander powder, garam masala, salt and mix well.
- Fry till tomatoes are mushy. Adjust salt as per your taste.
- Add boiled eggs and fry for 2-3mins.
- Add coriander leaves and fry for few more minutes.
- Spicy egg curry is ready to serve. Serve hot with white rice or ghee rice or jeera rice or chapati.
